Being a transit sea between the cold northern seas and the temperate waters of the Azores, the Cantabrian Sea is rich in plant and animal species. Among its flagship products are anchovies, which, compared to those of the Mediterranean, are much fleshier and larger due to the coldness of the waters. This forces them to move constantly, preventing them from remaining still, resulting in a firm and flavorful flesh. Furthermore, they undergo a curing process of at least 45 days to achieve the highest organoleptic qualities.
