The Lotamar Limited Series is created using a selection of the largest anchovies caught in the months of April and May, when this fish reaches its maximum quality.
They are then processed entirely by hand and only by expert personnel to become tasty fillets. The anchovies are fished exclusively in the Cantabrian Sea in the spring months and immediately selected one by one to be salted in barrels. Here they remain for nine months, after which they are processed by hand and placed in the characteristic tin box with olive oil.
Each brass is marked with each operator's number and a limited serial number.
